Chimayo Pepper Plant : Developed by the New Mexico State University. Produces heavy yields of 4" long hot peppers. Early maturing medium-hot chile. Peppers turn from green to red when mature. Excellent all round pepper for roasting, making chile powder, ristras, sauces and salsa.
