Pasilla Oaxaca-(Capsicum annuum)-The Pasilla Oaxaca pepper is related to
the other Pasilla types in the State of Oaxaca, Mexico. This variant
often is being named Pasilla Mixe which it is not is grown in the
foothills of Oaxaca like the Mixe but is not the same chile. The Pasilla
Oaxaca has a thicker flesh than the Mixe and a sweeter flavor. It ripens from very
dark green to brown. The peppers are about 6 inches long and 2 inches in
width near the stem. They are used for stuffing and roasting but also
smoked dried and used in traditional sauces like mole. The Pasilla
Oaxaca chile plants grow over 3 feet tall.
