Beets prefers well-drained sandy loam to silt loam soil, high in organic matter, with pH between 6.0 and 8.0 and free of large stones. Early crop can be planted in March/April, and late crop anytime from June to September. Beets need to maintain plenty of moisture. Pants should be thinned to 3–4 inches between plants. Don’t forget about the tops! Beet greens are great and have a delicious flavor, and hold more nutrition than the roots.
