Pasilla Bajio-Chilaca-(capsicum annum)- Peppers grow 8 to 10 inches long and are thin walled and mature from dark green to dark brown. Sometimes almost looking black in
color. Known for its rich smoky flavor it can be used to flavor any
dish. It is called ‘chilaca’ when fresh and adds character to red chile
enchilada sauce and salsas. Popular as a dried pod or in powder form, it
is a very flavorful ingredient in many mole sauce. Pasilla Bajio chile
plants grow up to 3 feet tall.
