Southern Cornbread Recipe
Ingredients:
• 1½ cups
Yelton’s Best Self-Rising Corn Meal
• ½ cup
all-purpose flour (optional, for a softer crumb)
• 1
tablespoon Blue Moon Yep! Shake seasoning
• 2 eggs
• 1½ cups
buttermilk
• ¼ cup
Duke’s Mayonnaise (adds richness and moisture)
• ¼ cup
melted unsalted butter or bacon drippings
• Optional:
1 tablespoon sugar (if you like it a touch sweet)
Instructions:
1. Preheat
oven to 425°F (218°C). Place a cast iron skillet in the oven to heat.
2. In a
large bowl, whisk together corn meal, flour, Yep! Shake, and sugar (if using).
3. In a
separate bowl, beat eggs, then stir in buttermilk and Duke’s Mayonnaise.
4. Combine
wet and dry ingredients, then stir in melted butter or drippings.
5. Carefully
remove hot skillet from oven, grease it lightly, and pour in the batter.
6. Bake for
20–25 minutes, or until golden brown and a toothpick comes out clean.
7. Let cool
slightly, then slice and serve warm.
