    Aji Crystal Pepper Plant : Heirloom Yields 3 ½" long by 1 ½" wide hot peppers with a citrus flavor. Pepper turn from light green, to pale yellow, to red when mature. A variety from Curico, Chile, with a plant that grows to 36" tall. Excellent for making salsa.

    Aji Rojo Pepper Plant : Also known as Puca uchu or Aji Red. Good yields of 5" long by 1" wide hot peppers. Long pendant shaped pods mature from green to deep orange/red. A variety from Peru with plant that grow to about 2 ft. tall and 3 ft. wide. The peppers are very mild at the green stage. Quite a rare pepper.

    Aji Panca Pepper Plant : Also known as the Aji Brown grows very large up to 6 inches in length and over and inch wide. They ripe to a blackish brown and are often found dried in the Peruvian market. They are known for their rich smoky flavor. Great for adding to BBQ sauces, BBQ rubs, soups, stews or grilled and stuffed. Ideal chile for making a Mexican Mole.

    Aji Cachucha Purple Splotched is a sweet mild variety from the Caribbean. From master grower Julio Lopez from Puerto Rico. Julio grows many Aji Cachucha types. It would be considered a cooking or seasoning pepper. This pepper ripens from green to purple to red. The purple splotches all over making it look so beautiful as it goes through it's ripening stages. The flavor is unique and sweet. The Aji Cachucha Purple Splotched chile plants are very productive.
