How to Grow Red Pontiac Potatoes

When to Plant

Plant in early spring, once the ground can be worked and after the last frost. Red Pontiacs thrive in cooler temperatures and are one of the earliest crops you can plant.

Soil Preparation

  • Use well-drained, loose soil with a pH between 5.0 and 6.0.
  • Add compost or aged manure to enrich soil and support root growth.

Planting Instructions

  1. Cut large seed potatoes into chunks, each with at least one “eye.”
  2. Let cut pieces dry for 24 hours to form a protective layer and prevent rot.
  3. Plant 4–6 inches deep, spaced 12 inches apart.
  4. Space rows 30–36 inches apart for airflow and easy hilling.

Hilling

As the plants grow, mound soil around the stems every few weeks. This protects developing tubers from sunlight and increases yields—especially important for indeterminate varieties like Red Pontiac.

Watering

Keep the soil consistently moist, providing about 1–2 inches of water per week, especially while tubers are forming. Avoid overwatering or soggy soil.

Mulching

Apply mulch to help retain moisture, suppress weeds, and regulate soil temperature.

Harvesting

Harvest once the vines yellow and die back, typically in mid to late summer.
Use a garden fork or spade to gently lift the tubers, being careful not to bruise them.

Is Red Pontiac a Determinate or Indeterminate Potato?

Red Pontiac is a determinate potato variety.

What This Means:

  • Tubers form primarily in one main layer near the seed piece
  • Plants mature more uniformly
  • Harvest typically occurs in one concentrated window
  • Ideal for gardeners who want a single main harvest

Determinate varieties like Red Pontiac are well-suited for home gardens, raised beds, and row planting, where predictable growth and easy harvesting are important.

Culinary Uses – Versatile and Delicious

Red Pontiac potatoes are a kitchen staple thanks to their creamy texture and rich flavor. Use them in a variety of recipes:

  • Mashed Potatoes: Creamy and smooth with a mild, earthy flavor.
  • Roasted: Roast with garlic and herbs for crispy skins and fluffy centers.
  • Baked: Holds structure well—perfect for baking whole or sliced.
  • Fried: Great for golden fries, home fries, or hash browns.
  • Soups & Stews: Adds heartiness and substance to your favorite dishes.

These potatoes not only taste great, but they also store well, making them ideal for preserving over the winter.
